The store, which was scheduled to open on Sunday, is now scheduled to open on Friday, Jan. 27, because of an inspector's schedule, said the Poughkeepsie Journal.

The project's opening has already been delayed several times when the original date of September was rescheduled to November and then to December.

Once opened, the restaurant at 2345 South Road in Poughkeepsie is expected to employ about 125 people.
