Owners Of The Blue Olive In Pawling Stress Education First, Selling Second

PAWLING, N.Y. -- The Blue Olive, a gourmet olive oil shop in Pawling, is about to sport a sister. This, after only a year and a half in business.

According to Co-Owner John Canevari, a location in Millerton has been selected with the hopes of opening soon after the new year.

First, however, there are other things on the agenda. The store's e-commerce site is about to launch and there are a host of upcoming events, including one on Friday, Nov. 20 at 6:30 on cooking with olive oils for Thanksgiving and Christmas. Another one, on "Olive Oil 101" explaining the uses of oils will be held sometime after the first of the year.

There are more than 50 varieties in the store, many of which most first-time customers have never heard of. "Americans are not very educated about olive oils," explained Canevari. "We think of it as our mission to help teach them."

According to Canevari, infused and fused olive oils tend to be the biggest sellers -- people like the idea of some type of essence.

Among the store's biggest seller: a Tuscan Herb olive oil.

Balsamic vinegars also do well in addition to the store's other speciality items.

Canevari stressed that the store, which does well with chefs looking to "up" their kitchen arsenals, is also very much a tasting room where folks can sample before they buy -- and learn in the process.

Education is key and how The Blue Olive distinguishes itself from other similar-themed stores. Cooking seminars and other events are part of that. 

Canevari said he and his partners -- the store is owned by himself and his wife, Beth, and by friends Laura and John Leahy -- prides itself on its customer service.

"We wholeheartedly believe in making our customers educated consumers, " he said. "Because we know that once they understand and experience the quality of our oils, they will not only be satisfied with their purchase, but will be back for more."
