Ella's Bellas, (418 Main Street, Beacon, 845-765-8502): Vegan desserts and gluten-free pies including pecan bourbon, fudge (with homemade chocolate), cranberry sour cherry, apple and pumpkin are part of the repertoire here. Order by Sunday, Nov 22.

McKinney & Doyle- The Corner Bakery, (10 Charles Colman Blvd., Pawling, 845-855-3707): Old fashioned apple pie, sour cream apple pie, coconut custard, and pumpkin are on the menu at this popular bakery where everything is made from scratch. Order by Monday, Nov. 23.
Tiramisu (810 NY-82, Hopewell Junction, 845- 227-8707) Wheat pies are on the menu along with other traditional Italian and American goodies such as pecan, apple and pumpkin pies. Order as soon as possible, then pick up on Thanksgiving day when the eatery will be open from 9 a.m. to noon.
