The restaurant recently opened last week at 1379 U.S. 9, offering American cuisine with a global influence, using products grown locally from farms throughout the Hudson Valley. Owner Jesse Camac and his partners had been working on the restaurant for a year. (See earlier Daily Voice story here.)

"We're making as much as we can in-house," said Camac.

"We make our own burger buns, we dry age our steaks and we make our own ketchup. We're doing it with local ingredients."

Camac moved to the Town of Poughkeepsie to be with his wife. He said he wanted to give people on Route 9 something different than the chain restaurants populating the area.

"This is now what people are used to seeing," Camac said. "We wanted a high visibility."

Feedback has been positive so far, with people enjoying the space, Camac said.

"We're pretty happy so far," Camac said.

Camac said he enjoys helping local businesses and farmers and thinks customers can taste the difference.

"We're doing the right thing," Camac said. "We make sure they are treating their animals the right way and not using certain sprays."

When it comes to the menu, it offers everything from chicken and biscuits and burgers to grilled trout and whiskey aged rib eye.

"We don't want to corner ourselves," Camac said. "We cook food that we like to cook."

Camac said he wants Heritage to be a place where people can come in and have a burger and a beer or enjoy dinner with steak and a bottle of wine.

"We want to have something for everybody," Camac said.
