X-Planations: Chef Peter X. Kelly Serves Up Roast Pork X-Planations: Chef Peter X. Kelly Serves Up Roast Pork
X-Planations: Chef Peter X. Kelly Serves Up Roast Pork YONKERS, N.Y. -- This recipe was inspired by a meal my mother often served when company was expected. She'd roast fresh ham or leg of pork for six to seven hours until it was severely overcooked, then serve with potatoes that had been cooked earlier in the day. My roast rack of pork with butternut squash puree and julienne apple preserves my mother's intent of simplicity but in the words of a famous chef, “kicks it up a notch.” I substitute a trimmed and brined rack of pork (ask your butcher) for the ham with butternut squash puree taking the place of the mashed potatoes.  I've added th…

Mamaroneck's 'Skinny House' Is Big On Family History MAMARONECK, N.Y. -- The "Skinny House" at 175 Grand St.in Mamaroneck is more than just a house. Sure, it's interesting architecturally --  it measures only 10 feet wide and sits on a 12 ½ foot wide parcel of land --  but for the two women who are descendants of the men behind its history, one in Mamaroneck, and one in Northern Virginia, it's a family story rich in history. "The focus has always been on the architectural details of the house," said Julie Seely, the granddaughter of Nathan Seely, the home's original owner who remembers playing on the narrow stairs as a child. But for this…
